So that ½ marathon….have you already forgotten? I’ve been easing into a training schedule that by the way…has been surprisingly manageable. I’m only up to 3 miles right now but each week I add to that. Next week I’ll be shooting for 5, and in order to reach the 5 mile goal we’re going to stack the decks a little bit.
Honey & sea salt almond butter. That’s right. One of my personal faves and usually at breakfast. I toast sprouted grain bread, give myself a good shmeer and I’m off like a rocket.
Now hopefully you know by now that I wouldn’t throw you a curve ball. I promise this is incredibly easy and fast…knowing none of us have time during the week to futz around. I got this recipe from Two Peas and Their Pod, and all you need are 3 ingredients: almonds, sea salt and honey. That’s delightfully it.
The first thing you do is put the almonds in a food processor (or high-powered blender.)
The almonds are going to go through stages, and will take about 5 minutes for all to be said and done. First they break down and become powdery:
After a couple of minutes the almonds will start to release their oils and you’ll end up with this:
Honey & Sea Salt Almond Butter
1 ½ cups of almonds
1 tsp sea salt
2 tbsp honey
Grind the almonds in a food processor or high-powered blender. Top with sea salt and honey.
