Friday Night Cocktail

Happy Friday kittens!

By the time Friday rolls around we’re ready to let loose. I hope you can sit back, relax and kick up some dirt with a cocktail in hand. I’m not much of a mixologist, but here’s my first go at a classic favorite — the Mojito — made with mango and minus the refined sugar. Nothing to feel guilty about and you’ll be hangover free — assuming you’re not participating in a drinking contest at the county fair. There’s nothing worse than having a toddler at the foot of your bed begging for a horsey ride when your head is pounding. I made that mistake ONCE, never to be made again. Everything in moderation.

Guilt-Free Mango Mojito

6-8 fresh mint leaves
1 oz rum
2 oz mango puree
1 tsp agave nectar
ice
soda water
1-2 lime wedges

Put the rum in the bottom of a sturdy glass with the mint leaves. Let it hang out in there for about a minute so the leaves soften. Muddle the leaves into big chunks with the back of a wooden spoon. Add the mango puree and agave and stir really well. From here fill your glass with ice and top with fresh lime and soda water.

If the mangos are already sweet, option to omit the agave all together. Cheers, mates.
