Last night I went to my old stand by, the rotisserie chicken for a little help with dinner. This is my version of “fast food” as in the kind pre-prepared by Whole Foods or New Seasons. You can use these to make any chicken dish, as in salads, soups, tortillas and casserole types and in doing so you cut about 40 minutes out of your cooking time. I also use the left over bones to make chicken stock so the economy on these is pretty great. They add a ton of flavor and are always super moist and dee-lish.
One of my favorite ways to eat salads is with a mix of raw and warm ingredients. The warm ingredients (including the dressing) make the greens wilt just slightly which I love.
Warm Chicken & Roasted Vegetable Salad
1 head of lettuce
2 carrots, sliced
1 red onion, sliced in large chunks
1 pre-made rotisserie chicken
Salt and pepper to taste
Drizzle the carrots and onions with olive oil, salt and peper and roast in the oven at 450 degrees for 25-30 minutes. Potatoes would also be great on this salad! Warm the dressing in a microwave-safe (glass) bowl for 20-30 seconds.
Assemble the ingredients over a bed of lettuce greens.
I had some potato salad from New Seasons also which we added to the plate. It’s a really good one if you haven’t tried it!
